Elliot’s pastry creations now have a permanent address
March 18 saw the much-anticipated opening of north Austin’s Bribery Bakery, at the helm of former co-owner and pastry chef of Foreign and Domestic Jodi Elliot. The art of pastries is not just a hobby for Elliot, rather it is her passion. After dabbling at some of the top restaurants, hotels, and bakeries in cities like Portland, London, and New York City, she has decided to take her dream to the next step in Austin. Stemmed from the success and popularity of the occasional Foreign and Domestic pop-up bake sales, Elliot decided to give her pastry creations a permanent address.
Bribery prides itself as a full-service bakeshop, serving up a variety of baked goods including cakes, pies, tarts, and danishes. Expect a mix of sweet and savory treats and grab and go lunches.

Bribery also just announced plans for their second location
Bribery is Elliot’s pastry sanctuary. She designed the interior herself, which successfully radiates her aesthetic (she even hung the wallpaper!). With the right combination of modern and vintage pieces, the feminine space feels similar to hanging out in your really awesome and stylish grandmother’s house – in the best way possible. She also built her dream kitchen, including features like a humidity controlled oven, which takes the hesitation and guesswork out of complex recipes (like those famous pop-overs) and allows Elliot to focus more on creating unique sweets rather then babysitting them in the oven. With a factory of a space, we expect Bribery treats to pop-up all over Austin soon.
Bribery also just announced plans for a second location at AMLI Mueller development later this year, where she will again work with architect Kevin Stewart (Dai Due, The Peached Tortilla, Gemelli). Bribery’s second location will function as a bakery during the day but will transform in the evening into a modern sophisticated dessert bar with plated desserts, comfort foods, wine, beer and cocktails. She is currently seeking help funding the project through the Texas Entrepreneur Network.
